This pizza bursts with the vibrant flavors of the Mediterranean! Packed with sardines, fresh mozzarella, juicy tomatoes, and aromatic herbs, it offers a perfect balance of tangy, salty, and savory notes.

Ingredients:

  • 1 pound prepared pizza dough (store-bought or homemade)
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried Greek seasoning
  • 1/4 cup pizza sauce
  • 8 slices fresh mozzarella cheese, or more to taste
  • 1/4 cup halved cherry tomatoes
  • 10 sardines, drained
  • 1 1/2 teaspoons dried oregano
  • 1 large egg (optional)
  • 3 fresh basil leaves, torn
  • 2 teaspoons lemon juice, or to taste

Instructions:

  1. Preheat the Grill: Fire up your gas grill! Turn all burners to high and preheat for 10-15 minutes.
  2. Shape and Pre-Cook the Dough: Stretch or roll out your prepared pizza dough into a circular disc. Once the grill is preheated, adjust the burners to create zones of direct and indirect heat: turn off half the burners or reduce their flame to low. Carefully place the dough on the grill directly over the high heat zone. Close the lid and let the dough cook for 1-3 minutes, until the bottom is slightly browned and shows grill marks.
  3. Assemble the Pizza: Using tongs, flip the dough and move it to the indirect heat section of the grill. Brush the dough with olive oil and sprinkle with the Greek seasoning. Top generously with mozzarella cheese slices, halved cherry tomatoes, and the sardines.
  4. Flavor Boost with Herbs and Egg (Optional): Sprinkle the pizza evenly with dried oregano. If using the egg, crack it open carefully and place it in the center of the pizza.
  5. Grill to Perfection: Close the grill lid and cook for about 3 minutes, until the cheese is melted and bubbly, and the egg white is no longer runny (if using).
  6. Finishing Touches: Carefully remove the pizza from the grill and onto a serving platter. Garnish with the torn fresh basil leaves and a squeeze of lemon juice to taste.

Cook’s Tips:

  • Need dough in a pinch? Check the freezer section at your local grocery store for pre-made pizza dough. You can also halve this recipe and use two smaller dough discs.
  • The egg is entirely optional! If you prefer a firmer egg white, place the assembled pizza under a broiler for a few seconds before serving.
  • For an extra burst of zesty flavor, add thin lemon slices directly to the pizza. Don’t worry, the lemon peel is perfectly edible!
