Ingredients:

  • Lemon Aioli:
    • 2 tablespoons mayonnaise
    • 1/2 teaspoon lemon zest
    • 1 teaspoon lemon juice (more to taste)
    • 1 teaspoon finely grated garlic
    • Salt and freshly ground black pepper to taste
    • 1 teaspoon milk (more as needed)
  • Cod:
    • 4 (6-ounce) cod fillets
    • 1 tablespoon olive oil
    • 1 tablespoon unsalted butter
    • 1 teaspoon Italian seasoning

Instructions:

  1. Make the Lemon Aioli:
    • In a small bowl, whisk together mayonnaise, lemon zest, lemon juice, and finely grated garlic. Season with salt and pepper to taste.
    • If the aioli is too thick, gradually add milk, a teaspoon at a time, until it reaches a drizzling consistency.
  2. Prepare the Cod:
    • Pat the cod fillets dry with paper towels to ensure they sear properly.
  3. Sear the Cod:
    • Heat olive oil and butter in a large skillet over medium-high heat.
  4. Season and Sear:
    • Sprinkle both sides of the cod fillets with Italian seasoning, salt, and pepper.
    • Carefully add the cod fillets to the hot skillet and sear for 3-4 minutes per side, or until golden brown and flaky when tested with a fork.
