This recipe offers a delightful twist on Eggs Benedict, perfect for those who love the classic flavors but want a simpler preparation. We ditch the hollandaise and poaching in favor of a quick and easy lemon butter sauce, resulting in a lighter yet equally delicious dish.



  • 2 teaspoons melted butter
  • 4 round or oval deli ham slices (about 2 ounces)
  • 2 large eggs
  • Pinch of salt
  • Pinch of cayenne pepper (optional)

Lemon Butter Sauce:

  • 1 lemon, juiced (about 2 tablespoons)
  • 1 tablespoon water
  • Pinch of salt
  • 2 tablespoons cold unsalted butter, sliced
  • Pinch of cayenne pepper or a few drops of hot sauce (optional)


  • 1 English muffin, halved, toasted, and buttered
  • 1 teaspoon freshly snipped chives for garnish


  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease 2 (5-ounce) ramekins (or 2 wells of a muffin tin) with the melted butter.
  2. Create Ham Cups: Line each ramekin with two slices of ham, ensuring the edges reach the top.
  3. Bake the Eggs: Crack an egg into a small bowl and gently transfer it to a ham-lined ramekin. Repeat with the second egg. Season each with salt and cayenne pepper (optional). Bake for 20-25 minutes, or until the whites are set and the yolks are still runny. Remember, the eggs will continue to cook after removing them from the oven.
  4. Make the Lemon Butter Sauce (While Eggs Bake): In a small saucepan, combine lemon juice, water, and salt. Bring to a simmer over medium heat and reduce the liquid by half, about 1-2 minutes.
  5. Finish the Sauce: Reduce heat to low and add the butter slices one at a time, swirling the pan constantly until the butter emulsifies (forms a smooth sauce). Once all the butter is incorporated, remove from heat and continue swirling until melted. Season with cayenne pepper or hot sauce (optional). Keep the sauce warm until ready to serve.
  6. Assemble and Serve: Toast and butter your English muffin halves. Transfer the baked ham and eggs onto the toast. Spoon the warm lemon butter sauce over the top. Garnish with fresh chives and enjoy immediately!
