This quick and flavorful dish captures the essence of the Mediterranean with fresh herbs, garlic, and bright lemon. The cod cooks up in just 25 minutes, making it a perfect weeknight meal. Pair it with roasted potatoes and a simple green salad for a complete and satisfying dinner.

Ingredients:

  • Herb Butter:
    • 3 tablespoons softened unsalted butter
    • 1 tablespoon finely minced fresh garlic
    • 1 tablespoon minced fresh parsley
    • 2 teaspoons minced fresh oregano
    • 1 teaspoon minced fresh thyme or rosemary
    • 1/2 teaspoon finely ground pink salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/2 teaspoon paprika
  • Cod:
    • 4 (6-ounce) cod fillets
    • 2 lemons, thinly sliced into 8 slices each
    • 1 tablespoon extra virgin olive oil
    • 4 sprigs fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Make the Herb Butter: On a cutting board, combine the softened butter, garlic, parsley, oregano, thyme (or rosemary), salt, pepper, and paprika. Using a sharp knife, scrape and mix the herbs and garlic into the butter until well-blended.
  3. Prepare the Cod: Pat the cod fillets dry with paper towels. In a large baking dish (about 12×18 inches), arrange the cod fillets on top of half the lemon slices (2 slices per fillet).
  4. Assemble and Bake: Divide the herb butter evenly over the cod fillets, spreading it gently with a fork or spatula. Top each fillet with the remaining lemon slices. Bake in the preheated oven for 13-15 minutes, or until the cod flakes easily with a fork.

Cooking Tip: Thinner cod fillets (less than ½ inch thick) may cook faster. Check for doneness at 10 minutes and adjust baking time as needed.

  1. Serve and Enjoy: Drizzle each fillet with a touch of extra virgin olive oil for an extra layer of flavor. Garnish with fresh parsley sprigs (optional) and serve immediately alongside your favorite potato dish and a green salad.
