Light & Zesty Blueberry Lemon Pancakes: Whip Up Breakfast in Minutes!

Craving a delicious homemade breakfast but short on time? These Blueberry Lemon Pancakes are your answer! They’re fast, fuss-free, and bursting with fresh flavor, perfect for busy mornings or weekend brunches.

No need for fancy ingredients: Whip up a batch with your favorite pancake mix (we love a homemade blend, but store-bought works too!), and add a delightful citrusy twist with lemon zest, juice, and a touch of lime. Fresh blueberries burst in every bite, creating a light and refreshing pancake experience.

Ready to get started? Here’s what you’ll need:

  • 2 cups your favorite pancake mix
  • 1 1/2 cups water
  • 1 lemon (zested and juiced)
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • 16 ounces fresh blueberries
  • Butter for cooking

  1. In a large bowl, whisk together your pancake mix, water, lemon zest and juice, lime juice, and vanilla extract. Mix until just combined – a few lumps are okay, don’t overmix!
  2. Gently fold in the fresh blueberries, being careful not to mash them.
  3. Heat a pan or griddle over medium heat and melt a pat of butter. Pour batter onto the pan, creating pancakes of your desired size.
  4. Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface. Flip carefully and cook for another minute or two until cooked through.
  5. Repeat with remaining batter.
  6. Serve warm with your favorite syrup, fresh berries, or a dollop of whipped cream.

  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
  • Don’t be afraid to experiment! Add other citrus fruits like grapefruit or orange for a different flavor twist.
  • Use frozen blueberries if fresh aren’t available. Thaw slightly before adding to the batter.
  • Make it a complete breakfast by serving alongside scrambled eggs, bacon, or fruit salad.

Enjoy your delicious and easy Blueberry Lemon Pancakes!
