This refreshing salad bursts with the sweet flavors of summer stone fruits and pairs them with peppery arugula for a delightful contrast. Rosé vinegar adds a delicate floral note to the dressing, but you can substitute regular red wine vinegar if preferred.


  • Dressing:
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons rosé vinegar (or red wine vinegar)
    • 3/4 teaspoon salt
    • 1/2 teaspoon black pepper
  • Salad:
    • 1 ½ cups mixed cherry tomatoes, halved
    • 1 (5-ounce) package arugula
    • ¾ cup fresh basil leaves
    • 2 nectarines, thinly sliced
    • 1 large white peach, thinly sliced
    • 1 cup Rainier cherries (or other sweet yellow cherries), pitted and halved
    • ½ teaspoon flaky sea salt


  1. Make the dressing: In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  2. Assemble the salad: Arrange the cherry tomatoes, arugula, and basil leaves on a large platter. Top with the sliced nectarines and peaches.
  3. Dress and serve: Drizzle half of the dressing over the salad. Scatter the cherries over the top and sprinkle with flaky sea salt. Drizzle with the remaining dressing and serve immediately.
