Love samosas but want a healthier way to enjoy them? Look no further than your air fryer! This recipe creates delicious vegetarian samosas with a potato and pea filling, but feel free to experiment with your favorite fillings.

Ingredients:

  • Filling:
    • 12 ounces Yukon Gold potatoes, peeled and cut into 1-inch pieces
    • 1 tablespoon extra-virgin olive oil
    • 1/2 cup chopped onion
    • 1 teaspoon grated fresh ginger
    • 2 cloves garlic, minced
    • 1 teaspoon garam masala
    • 1/2 teaspoon cumin
    • 1/4 teaspoon salt

    • 2/3 cup frozen peas, thawed
    • 1/4 cup chopped fresh cilantro, plus more for garnish
  • Samosa Wrappers:
    • 24 wonton wrappers
    • Cooking spray
  • Cilantro-Yogurt Sauce (optional):
    • 3/4 cup whole-milk Greek yogurt
    • 1/3 cup chopped fresh cilantro, plus more for garnish
    • 1 teaspoon lime zest
    • 1 tablespoon lime juice
    • 1 clove garlic, chopped
    • 1 pinch salt
    • 1 pinch freshly ground black pepper

Instructions:

  1. Cook the Potato Filling:
    • Boil the potatoes until fork-tender, then mash them with a few chunks remaining.
    • Sauté onion, ginger, and garlic in olive oil. Add spices and cook briefly.
    • Combine mashed potatoes, peas, and cilantro in the pan.
  2. Assemble the Samosas:
    • Lay out wonton wrappers and spoon filling in the center.
    • Moisten the edges with water and fold into triangles, sealing the edges.
    • Spray the samosas lightly with cooking spray.
  3. Air Fry the Samosas:
    • Preheat your air fryer to 350 degrees Fahrenheit (175 degrees Celsius). Lightly coat the basket with cooking spray.
    • Working in batches, arrange the samosas in a single layer and cook for about 8 minutes, flipping halfway through, until golden brown and crispy.
  4. Make the Cilantro-Yogurt Sauce (optional):
    • Combine all sauce ingredients in a food processor and blend until smooth. Chill until ready to serve.
